Grinding takes the stump below grade rather than digging it out, which is faster, cheaper, and far less destructive to the surrounding yard than excavation. Grinding produces a surprising volume of chips, and you get the choice of leaving them to settle - the pile will drop noticeably over a few months - or having them hauled off and the hole filled with topsoil, which costs a bit more and looks finished immediately. And anything buried near a stump matters: irrigation lines, invisible fence wire, and utility runs all need locating before a grinder starts, which is a conversation worth having at the estimate.
